Pacific halibut is the largest species of flatfish. Similar to the black cod, halibut collars contain high fat contents with skin that can become incredibly crispy when grilled. The collar is rich in omega 3 fatty acids and the high fat content makes the cut of fish harder to overcook.

On the other hand, halibuts are known to be lean fish with natural sweetness. However, the halibut belly, as well as the collar, is high in fat content. The species of fish is also high in selenium, antioxidants, and anti-inflammatory characteristics.
